Mini Star Cakes With Lemon Cream Cheese Frosting

There are two things I love to bring to BBQs: watermelon and cake. My favorite kind of cake is angel food cake because it goes so well with all the summer fruits and you can totally load it up with whipped cream or ice cream…or any kind of cream thing and it is delicious. So this year for 4th of July festivities I have incorporated all the things I love into one hand held patriotic dessert treat.




Makes twelve 3.5 ” mini cakes

2 packages loaf style angel food cake ( extra points if you make from scratch)

1/2 package of cream cheese (softened)

3/4 cup powdered sugar

2 tsp butter (softened)

juice of 1 lemon

fresh strawberries & blueberries for garnish


How To

Cut your angel food cake into 1/2 inch thick slices and use a star cookie cutter (save the scraps you can dip them in the left over frosting later!)



After all your stars are cut out combine the cream cheese, lemon juice, powdered sugar and butter in a mixing bowl. Use a hand mixer on medium and beat until you get a fluffy consistency.



Spread the frosting on your stars and garnish with strawberries and blueberries, or whatever red and blue goodies you like!
